Triple Cheese Lasagna

You have comfort food and you have COMFORT FOOD. The second does take a little more time, but trust me it is so worth it. It's a classic lasagna recipe with some small changes. First off all it is veggie. Second it has 3 different kinds of cheese that take you to cheese comfort heaven. And the cheeses are integrated in each layer of white sauce. This makes sure it is totally smooth.


It's a perfect dish for a cold day when you need that extra love. This lasagna gives you just the hug you were needing.

Anyway, every time I make this the

oven dish is quite empty in the end.

Even though I always make extras

(one of my weaknesses).



Recipe for 4 persons.

Prep time: 10-15 min

Cooking time: 90 min

Ingredients:

Red sauce:

  • 1 tbsp vegetable oil

  • 2 Onion

  • 6 Pieces of Garlic

  • 2 Bell peppers

  • 1 Aubergine

  • 1 Courgette

  • 1l Passata

  • 200 ml Tomato concentrate

  • 100 mg Dry Minced Soy

  • 300 g Mushrooms

  • Pepper & Salt

  • 1 tbsp Chives

  • 2 tbsp Paprika

  • 2 tsp Chili powder

  • 2 tsp Chipotle chili powder

  • 2 tsp Curry

  • 1 - 3 tbsp Balsamic vinegar

White sauce:

  • 800 ml Almond milk

  • 200 ml Coconut milk

  • 2 cubes of vegetable broth

  • 1/4 cup Cornflower

  • 100 ml water

Extra:

  • lasagna sheets

  • Grated Emmental

  • Matured Goat cheese

  • Semi matured Gouda

  • Oregano



Preparation:

Red sauce:

  • Clean the Vegetables and slice them in medium pieces.

  • Bring the Oil to a heat.

  • Stew the Vegetables in the Oil.

  • Add the Passata and the Tomato Concentrate.

  • Let this simmer on medium heat until all the vegetables are done.

  • Add the Minced Soy and the Herbs.

  • Let it simmer another 5 minutes.

  • Blend the sauce.

  • Add the balsamic vinegar until you have the desired taste.

White sauce:

  • Open the can of Coconut Milk and drain the liquid.

  • Bring the Almond Milk and drained Coconut Milk to a boil.

  • Add the Vegetable Broth.

  • Mix the Cornflower with the Water and mix until there are no more lumps.

  • When the milk boils add the Cornflower mixture

  • Whisk everything together and keep whisking to make sure you don't get any lumps.

  • Let the sauce thicken on a low heat for about 5 minutes.

=> Left over sauce you can freeze for another time

The Lasagna:

  • Heat the oven to 180 °C.

  • Cut the cheeses into big pieces.

  • Pour some white sauce on the bodem off the dish

  • Put the lasagna together: Pasta sheet - Red sauce - White sauce - Cheese. >>> Use enough sauce!

  • Finish the top of the lasagna off with white sauce and... some extra cheese

  • Sprinkle some Oregano on the top.

  • Put the dish in the oven and bake for 30 - 45 minutes.

  • Make sure the Lasagna is ready by piercing in with a small thin knife. >>> when you feel resistance give it another 20 - 25 min. >>> when you don't feel any resistance but the knife is cold give it 10 - 15 min. >>> When you don't feel any resistance and the knife is hot, it's ready.
