This recipe is a mix of 5 different recipes with my own influence. I wanted to create a nice looking pie but not to sweet. I only add a little bit of sugar because I'm already using sweet strawberry jam. It takes a while to make but totally worth it.
It's a crispy little pie on the outside with a soft and sweet strawberry-almond filling. Topped with the juicy Sweet & Sour Apples.
It's delicious to eat when they just come out the oven. But you can also let them cool down and save them for later in an air tight container. If you like to eat them later I like it to heat them up again in the oven. This way the icing sugar on top melts a little while you eat it.
Recipe for 12 persons

Ingredients:
3 scrolls of Puff Pastry (+/- 700g)
3 tbsp Flour
1/2 cup Strawberry Jam
1 cup Almond Flour
1/2 cup Melted Baking Margarine
2 Eggs
5 Red Apples
1 Lemon > for the Juice
2 tbsp Sugar
1 cup Apple Juice
Boiled Water
Extra: Flour and Baking Margarine
Recipe:
Heat the oven at 180 °C.
Squeeze out the Lemon to retrieve it's juice.
Take a bowl add the Apple Juice, Sugar, Lemon juice and Boiled water.
Wash the Apples, remove the core and slice them in 2 halves.
Take a Mandolin (for the kitchen) and slice the Apple halves thinly.
Throw the Apple slices immediately in the bowl with water and put on a lid. >>> Make sure the Slices are immersed. If not add some water.
Check the Apple slices between-whiles to check if they are bendable and don't break. >>> When they do, drain the liquid. .
To make the filling mix in a bowl the Strawberry Jam, Almond Flour, Molten Margarine and the Eggs together until there are no more lumps left.
Take the Puff Pastry. When you have round pastry dough like me, it's easier to fold it and reshape it to a rectangle with som Flour and a rolling pin.
Slice long strips off the dough and put them back in the fridge.
Put the pies together. Take a strip of dough, add some filling in the middle and place the Apple slices on it like in the picture.
Fold the bottom half up and roll the dough in a spiral shape. Be careful that the apple slices stay in place.
Put the rose pies in a baking tin that you greased in and dusted with Flour so the pies won't stick to the tin.
Place the baking tin on a rack in the oven.
Bake the pies for 45 min - 1 h at 180 °C.
Place aluminum foil over the top so the Apple don't burn.
You are sure the pies are ready when they come out of the tin easy and the bottom is nice and crispy.
When ready let the Apple Rose Pies cool down a little in the tin before taking them out.
