Marinated Olives and Feta

Recipe for 6 portions

Prep time:


Ingredients:

  • Feta Cheese

  • 180 g Black Olives (without pit)

  • 180 g Green Olives

  • Olive Oil Extra Viergin

  • 8 Garlic Cloves

  • Salt & Pepper

  • Dried Herbs: Chives, Oregano & Marjoram And evt.: Cayenne & Sweet Chili


Recipe:

  • Cut the feta in smaller cubes.

  • Leak the Olives.

  • If there are any pits left in the Olives now is the time to remove them. I do this with a cherry stoner, it works perfectly.

  • Remove the skin of the Garlic Cloves and crush them with the side of your knife.

  • Put the dried herbs together with a little Salt & Pepper. Pour the tbsp water with it and let it res for 10 min. Then pour Olive Oil over the herbs until they are immersed and set aside again for 10 min. Add the rest of the olive oil and mix.

  • Put the leaked Olives, cubed Feta and crushed Garlic in a big bowl. Pour the Herb Oil over everything and mix gently.

  • Set this aside in an airtight container in your fridge and let it marinate for at least 48 hours.

  • Just take the amount you need out and let the rest sit in the fridge for another time.
