It was november 2016... and my friend Isis asked us to come along with some friends to go kayaking to the city center of Ghent. Great idea, yes... but NOT when it is only 4°C outside and you are wearing regular jeans. Still we where enthusiastic enough.
We had a lot of fun though! But when we arrived at the city center everybody was some what wet and cold/frozen. Luckily I thought of bringing along some Hot apple cider.
My first intention was to take along som hot chocolate milk but these kayaking trips of ours always tend to be with beer. So beer and chocolate milk, that doesn't really mix very well.
I saw a recipe online for hot apple cider and made it. honestly I was a bit disappointed. It was nice but after 3 sips I already got bored, so I changed the recipe by adding some extra spice and spark to it.
The result Isn't boring at all anymore and when I gave it to my friends - who do not like regular apple cider - they kept on getting back for more.
Recipe for 8 persons
Prep time: 5 min
Cooking time: 60 min
Ingredients:
2 bottles of brut apple cider (75cl)
25 cl apple jenever
50 cl white rum
50 cl spiced rum >>> I used Captain Morgan
1 apple
1 mandarin (peeled)
2 cm fresh ginger
8 cloves
1 cinnamon stick
2 tbsp caster sugar/agave sirope
1 tsp grounded cinnamon
1 tsp pili-pili
1 tsp vanilla essence
recipe:
Cut the apple in big pieces.
Slice the mandarin in 2 so all the taste and juices can come free.
Slice the ginger thinly, no need to peel it.
Take a big casserole and add: Cider, Jenever, Fruit, Sugar and spices (not the vanilla).
Put the lid on and heat it up but just don't bring it to a boil.
Let it simmer for 45 min.
Add the regular and spiced Rum, and the Vanilla.
Put the lid on bring to a boil for 3 min.
Sift the brew.
Keep the cinnamon stick, rinse it and put it back in the Hot apple cider.
