Homemade Granola



First thing, I need to make a confession. I am not a breakfast person. Most of the time I eat brunch or just skip it. I know it`s a bad and unhealthy habit, but I just can`t help it. But when I travel or take a vacation, the strangest thing happens. I like to eat breakfast in a sudden.

So I love to make this before I take off on leave.


This homemade granola is easy to make and delicious to eat. And when I make it I like to make a batch so I can last a while. The preparation time is the same if you make a small amount or a bigger one like this recipe. You can call me lazy by making a bunch yet I call it being prepared.


You`re probably wondering what is so special about this recipe. This granola or muesli is loaded, really loaded with seeds, nuts and dried fruit. There is no refined sugar in it though it is still sweet. This recipe also is glutenfree because almond flour and oatmeal flour is used instead of regular wheat flour.

The granola is sweet and crunchy. The dried fruit lifts up the bitterness of the cacao nibs which give you a subtle chocolate taste. Because of the variety of nuts and seeds, each bite is different and interesting.



Recipe for 1 very large mason jar.

Prep Time: 5 min

Total Time: 1 h 30 min

Ingredients:

  • 5 cups / 500 g rolled Oats (fine or coarse)

  • 3/4 cup Maple Sirup

  • 1/4 cup Rice Sirup

  • 3/4 cup Sunflower Oil (or other vegetable oil with subtle taste)

  • 1 1/2 cups Cacao Nibs

  • 1 1/2 cups Mix of Nuts & Seeds of choice

  • 1/2 cup Shredded Coconut

  • 1 cup Dried Cranberries

  • 1/2 cup Mixed Raisins

  • 1/4 cup Oatmeal Flour

  • 1/4 cup Almond Meal

  • 1 tsp Vanilla Powder

  • 1 tsp Fleur De Sel



Recipe:

  • Put about half of the dried aside.

  • Heat the oven to 145°C.

  • Mix all dry ingredients together in a large bowl.

  • Add the wet ingredients and half of the Dried Fruit. Mix so everything is coated with the Oil and Sirup.

  • Put baking parchment in 2 baking trays and spread the granola evenly.

  • Bake the granola 145°C for 45 minutes. Stir every 10 - 15 minutes to ensure the granola doesn`t get burned. Add the rest of the dried fruit at 30 minutes. Mix well.

  • The granola is ready when it has a golden brown colour.

  • Set it aside and let it cool completely.

  • When cooled, store in an airtight container.


Tip:

  • Eat with milk, yoghurt or fresh cheese.

  • Top with fresh fruit for a different taste.

  • Use as a topping for desserts.
