In corona times we are inside a lot more. This gives me the time to work out some more recipes and have some fun in the kitchen. I really think feta & garlic make a perfect combination with every sweeter vegetable. So feel free to try this with other vegies.
This recipe is super easy and so worth while. The pumpkin is glazed with a mixture of maple syrup, garlic and other spices. The smoked chilli gives it an extra dimension and subtle punch. Baked perfectly al dente and topped of with crumbled feta cheese. Your tastebuds will tingle with pleasure.
Recipe for 2 persons
Prep Time: 10 min.
Cooking Time: 30 min.
Ingredients:
1 Butternut squash
50 g Feta Cheese (more is definitely no problem)
Ingredients Glaze:
1 Clove of Garlic
1/4 c Maple Syrup
1 tbsp Olive Oil
1 tsp Smoked Chilli
1/2 tsp Paprika
1/2 tsp Salt & Pepper
Preparation:
Heat the oven at 200°C.
Prepare the glaze. Peel and remove the hart of the Clove of Garlic. Crush the Garlic and mix it with the other ingredients.
Peel the Butternut squash with a peeler. Slice in 2 from top to bottom. Remove the pulp and seeds.
Slice the Butternut halves in thin slices and put them on a baking sheet. Give them a little push so they topple over.
Stroke the glaze over the slices with a brush generously.
Crumble the Feta Cheese over the Butternut Slices.
Bake in the oven for about 25 - 30 minutes. If you see the Feta is browning to fast (after 10 minutes) Lower the heat of the oven to 180°C.
Variations:
Use this glaze on other sweeter vegetables like carrots, Parsnip, beetroot, sweet potatoes, corn (precooked) or other varieties of squash.
Sprinkle some Chervil or Chives on top to add a fresh touch.
