Colorful Winter Salad

This is a nice salad that consists winter vegetables, yet still looks very colorful. I like to stick with seasonal vegetables and fruit when I'm cooking. It's not just better for the environment but that's also when the product tastes best.

Normally I like to use lots of different herbs and spices in food to give it that extra zaza-zoom, but with this salad I left it simple. The Bitterness of the Broccoli, the earthy tones of the red Beets and the sweetness give it already an interesting sensation for your tastebuds. The Combo also has a variety of textures which keep it interesting.



Recipe for 10 people

Prep time: 30 min

Cooking Time: 15 min



Ingredients:

  • 3 Broccoli

  • 3 Red Beets

  • 3 Apples

  • Cold Water

  • 1 Lemon

  • 2 tbsp Olive Oil

  • Salt & Pepper









Recipe:

  • Clean the Broccoli and cut in pieces. Cook the pieces until they are soft but still have some bite left. Let them cool down in ice cold water.

  • Take a bowl and squeeze out the juice out of the Lemon. Add water.

  • Peel the Apples en remove the core. Slice them in thin strips with a mandoline or knife. After slicing them put them immediately in the Lemon-water. Make sure they are immersed, if not just add some extra water. Let them sit for about 5 min, then drain them.

  • Peel the Beets and slice them in small cubes.


  • Put the blanched Broccoli, marinated Apples and diced Beets together in a bowl. Add some Olive Oil, Salt & Pepper. Mix everything gently together.
