This really is one of the best cheesy garlic breads ever! It `s a perfect starter, side dish or snack; and once you start eating you just can `t stop... I just might have eaten to much of it; but no regrets here. It has a crunchy crust and a soft center. You can taste all the different cheeses, the nutty flavor of the almonds and garlic go so well together. The just taste keeps lingering in you `re mouth... It `s just Magnificent!
To make the dough you only need 5 minutes. So it `s super easy to make. The recipe also is free of gluten and lactose. (gluten free flour is used and the Cheeses are not from cows milk)

Ingredients:
1 Buffalo Mozarella
1/4 c Pecorino, freshley grated
2 tbsp Cream Cheese
1/8 c Emmental
1/2 c Almond Flour
2 tbsp Coconut Flour
1/2 tsp Baking powder
2 Cloves of Garlic
1 Egg
2 tbsp Olive oil
1/2 Tomato
Fresh Parsley
Fresh Chives
Pepper
Preparation:
Heat the oven to 200 °C
Take the Mozzarella out of the package, don `t let it leak out and put it immediatly in a pan. Pull it into pieces. Add the grated Pecorino.
Peel the cloves of Garlic and remove the center. Cut in small pieces and add to the cheese.
Heat the cheeses on a low fire, constantly stirring until molten. Remove from the stove.
Add the Cream Cheese, Almond & Coconut Flour, Baking Powder, Egg and 1 tbsp Olive oil. Mix it all together with a spoon until you get a sticky dough.
Spread the dough on a baking sheet, about 1 - 2 cm thick. You best do this with the spoon and smooth the surface with your hands.
Drizzle the rest of the Olive Oil over the top and add some fresh ground Pepper.
Place in the oven and bake for 20 minutes.
Add the grated Emmental Cheese and put in the oven for another 5 minutes.
In the meantime chop the Parsley, Chives and Slice the tomatoes in small cubes.
Take out the oven and let it rest for 5 minutes on a plate, this will make sure the texture is crunchy on the right places.
Sprinkle the Herbs and Chopped Tomatoes over the bread, slice and enjoy.
