A few years back, I was waking up in the arms of my husband (then still my boyfriend) with this song on. And as probably everybody knows this song has the amazing line of "making Banana-pancakes", it always makes me feel great and the butterflies are back for a moment.
So Hearing the song I gave me some inspiration to make the best American Banana & Blueberry-Pancakes.
And the great part is, it's vegan.
No Gluten, No lactose, No soy,
But sooooooooooooooo... Delicious!
Recipe for 2 persons.
Prep time: 10-15 min
Cooking time: 30 min
Ingredients:
1 cup oatmeal flour
2 tbsp vanilla sugar
1 pinch of salt
2 tbsp baking powder
1 tbsp baking soda
1 cup unsweetened (unroasted) almond milk
2 tbsp sunflower oil
1 tbsp cider vinegar
3 ripe bananas
300g fresh blueberries
Margarine of oil for baking the pancakes
Preparation:
Mix all the dry ingredients in one bowl
Mix all the wet ingredients in an other bowl
Crush 2 bananas withe a fork
Mix the dry and wet ingredients and the crushed banana together
Mix all the dry ingredients in one bowl

Slice the leftover banana in little pieces and add them to the dough together with the blueberries and stirr them through gently.
Heat a pancake-pan and add some oil or margarine. Wait until the pan is hot. Bake the pancakes on medium-high temperature.
Turn them when the dough gets semi-dry and little holes, the rim will be light brown.
Once turned reduce the heat off the stove to low-medium. The pancakes are done when the blueberries start to explode.
